Recipe: Vegan Queso Dip

This Vegan Queso Dip is truly a crowd pleaser! It’s quick & easy to make, super flavorful, and good with just about anything!


INGREDIENTS:

  • 1 cup hot water, plus more as needed

  • 1 cup raw cashews

  • 1 clove garlic, minced

  • 2 Tbsp nutritional yeast

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp salt, plus more to taste

  • ½ - 1 chipotle pepper in adobo sauce, or more if you like it spicier


DIRECTIONS:

  • Soak your cashews in hot water for about 20 minutes. Then drain.

  • Add all ingredients to a high powered blender or Vitamix. Add more hot water as needed to get the consistency you like.

  • Taste & adjust seasonings as needed. Add more chipotle peppers to make it spicier, more nutritional yeast to make it cheesier, or anything else you like!

  • Serve with tortilla chips, pour onto tacos, eat with veggies, add to a burrito bowl, the possibilities are endless!
