This Vegan Queso Dip is truly a crowd pleaser! It’s quick & easy to make, super flavorful, and good with just about anything!
1 cup hot water, plus more as needed
1 cup raw cashews
1 clove garlic, minced
2 Tbsp nutritional yeast
½ tsp smoked paprika
½ tsp cumin
½ tsp salt, plus more to taste
½ - 1 chipotle pepper in adobo sauce, or more if you like it spicier
Soak your cashews in hot water for about 20 minutes. Then drain.
Add all ingredients to a high powered blender or Vitamix. Add more hot water as needed to get the consistency you like.
Taste & adjust seasonings as needed. Add more chipotle peppers to make it spicier, more nutritional yeast to make it cheesier, or anything else you like!
Serve with tortilla chips, pour onto tacos, eat with veggies, add to a burrito bowl, the possibilities are endless!
